Season the pork with salt and pepper
Heat the olive oil and brown the meat on all sides
Remove the meat from the pan and reserve it
Remove excess fat from the pan and return it to heat
Add the pork, milk, and thyme
Let it simmer at high heat, then reduce heat and let cook for 45 minutes, or until the pork is tender
Remove the pork from the pan again and cover with aluminum foil
Reduce heat in the pan and add cornstarch dissolved in water
Let cook for one minute
Transfer the sauce to a blender and add fresh thyme leaves
Blend until smooth and serve with the pork cut into slices.
