3 cups of toasted breadcrumbs

'1 pork loin (about 1 kg)

Mix the breadcrumbs, orange zest, parsley, and onion
Add 120g of melted butter and 1/2 cup of orange juice
Mix well
Season the pork loin with salt, pepper, and a squeeze of lemon juice
Open up the pork loin like a large steak
Spread the filling over the meat and roll it up
Secure with toothpicks or kitchen twine
Melt an additional 1/2 cup of butter (there should be enough to cover the bottom of the pan)
Brown the pork loin on all sides
Add the remaining orange juice and cover the pan tightly
Cook or bake for about 2 hours, until the pork loin is tender
If it becomes too dry, add an additional 1 tablespoon of orange juice at a time
For a spicier filling, season with a little hot pepper sauce.
