1 pork loin, approximately 1 1/2 kg
2 slices of prosciutto or ham
3 scallions, peeled and cut into thin strips

1 cup of orange juice

Open the pork loin like a large steak
Pound with a meat mallet
Season with salt and pepper
Spread the prosciutto slices over the open pork loin
Cover with thin strips of scallion
Roll the pork loin into a roulade shape
Secure with toothpicks so it doesn't come apart
Place in a buttered baking dish
Add some butter pieces on top of the pork loin
Bake in a moderate oven, preheated and cook for 1 hour and a half or until the meat is tender
While cooking, baste with orange juice
To serve, remove the toothpicks and cut into slices.
