8 firm sweet potatoes, peeled
1 cup all-purpose flour
1/2 teaspoon ground cinnamon
1 cup water

Wash the sweet potatoes and remove most of the seeds
Scrape off a little from the top of each sweet potato
Arrange in a baking dish
Mix the flour with the cinnamon
Add the water and bring to a boil
Simmer for 5 minutes
Pour this liquid over the sweet potatoes and roast in a moderate oven for about 45 minutes
Serve with the vanilla sauce.
