Cut the top off the sweet potatoes and remove the eyes
Mix the raisins, nuts, and orange zest
Place the sweet potatoes in a baking dish
Fill the center with the raisin mixture
In a saucepan, mix the remaining ingredients
Heat to a boil, then reduce heat and simmer
Pour around the sweet potatoes
Bake at moderate temperature (170°C) for 50 minutes or until the sweet potatoes are cooked
Brush occasionally with the glaze.
