Place the egg yolks, egg, lemon juice, mustard, salt, and white pepper in a blender and blend for several seconds until the mixture is smooth and creamy
Without stopping the blender, slowly pour in the olive oil until the mixture is homogeneous and has a firm consistency
Serve in bowls and garnish each one with a sprig of parsley.
