2 tablespoons of light mayonnaise
1 cup of non-fat yogurt
2 teaspoons of cardamom (optional)
1 large carrot, diced into cubes
2 large potatoes, diced into cubes
1 large cucumber, diced into cubes
1/2 red onion, diced into cubes
1/2 cup of fresh parsley
Salt and black pepper to taste
2 tablespoons of light mayonnaise
1 cup of non-fat yogurt

Mix the yogurt, mayonnaise, cardamom, salt, and pepper
Blend well and refrigerate
Cook the carrot and potato separately in steam and let cool
Scald the red onion and cucumber and let cool
Place a layer of carrot, potato, cucumber, and red onion in a bowl
Dress with yogurt sauce and stack salad layers alternating with fresh parsley leaves and mayonnaise
Serve chilled.
