1/3 cup of grated Parmesan cheese (60g)
1/2 cup of all-purpose flour (60g)

Preheat the oven to 350°F (medium)
Grease a 20 cm x 30 cm baking dish with butter. Reserve
In a stand mixer, beat the whites until stiff peaks form (approximately 2 minutes)
Add the Parmesan cheese, beating always, until a homogeneous mixture is formed (approximately 2 minutes)
Add the yolks and continue beating until the mixture becomes creamy (about 5 minutes)
Remove from the mixer
Sift the flour and salt over the mixture
With a spatula, gently mix until uniform
Pour into the reserved baking dish
Bake in the preheated oven until the edges start to come loose (about 20 minutes)
Let cool for about 10 minutes
Lay a clean cloth on a surface and dust with Parmesan cheese
With a spatula, release the sides and bottom of the mass
Turn onto the cloth.
