Season the capon with salt, garlic, and black pepper
Abrade the capon and fill the cavity with chicken breast, cheese, and green olives
Roll the meat (like a rocambole) and tie it with fine twine
Bake in a preheated oven until golden brown (about 40 minutes)
Serve in slices, on a bed of fine lettuce and grated carrot
Place green olives around the capon
Serve with 'millionaire's' rice (with green corn) and sprinkle with pork cracklings.
