1/2 cup of tapioca
5 cups of milk
6 tablespoons of sugar
1 beaten egg, lightly whipped
2 bananas, sliced and soaked in lemon juice

In a bowl, soak the tapioca in 2 cups of milk for 30 minutes
Transfer this mixture to a saucepan, adding the remaining milk and sugar
Cook over low heat, stirring constantly with a wooden spoon, until the tapioca cooks and thickens slightly
Add the beaten egg and cook without stopping to stir for another minute
Remove from heat and let cool
Cover with plastic wrap to prevent a skin from forming on top of the pudding
Distribute into cups with lids and refrigerate until chilled
To serve, add sliced banana.
