Melt the butter or margarine over low heat
Add the flour, salt, and pepper if desired
Mix well
Combine thoroughly
Add all the milk at once, stirring constantly
Cook without stopping until the mixture thickens and bubbles
To finish this recipe, add: 1/2 cup of one of the fresh ricotta cheeses (Mina, Gorgonzola, Parmesan, or Ricotta) or smoked ricotta
Use 3 soup spoons for the cheese.
