4 tablespoons of olive oil
1 medium onion, cut into thin slices
1 red bell pepper, medium
1 green bell pepper, medium
1 yellow bell pepper, medium, cut into thin strips (or use 2 red ones if you can't find yellow)
4 anchovy fillets, well drained and finely chopped
1 clove of garlic, pressed
4 tablespoons of fresh parsley, chopped
black pepper to taste
500g package of spaghetti

Heat the olive oil in a frying pan over medium heat
Add the onion and cook until it's soft, about 10 minutes
Add the bell peppers and cook on low heat, stirring occasionally, until they're tender, about 5 minutes
Add the anchovies and garlic and cook on low heat for another 5 minutes
Add the parsley and black pepper
Mix with cooked macaroni al dente, drained and still warm
Serve in four portions.
