Fry the onion and garlic in olive oil until golden brown
Add the tomato extract, then gradually add the water, stirring well
Add the remaining ingredients and simmer for 30 minutes, stirring occasionally
Remove the bay leaf before serving
Serves with 500g (1 packet) of spaghetti, linguine or fettuccine
