Melt the butter
Add the flour and cook, stirring constantly for 2 minutes
Do not let it brown
Gradually add the milk, beating vigorously
Allow it to reach a boil
Reduce heat and simmer slowly for about 10 minutes, stirring occasionally
Taste and season with salt and pepper
To give a special touch, you can add 1/3 cup of heavy cream or two egg yolks.
