Rinse the ossobuco well in cold water and soak it in milk for 20 minutes
Drain and season with salt, black pepper, and cinnamon
Dust the shanks with parsley and dip them in beaten eggs
Then coat them in wheat flour and let them rest for 10 minutes
Heat oil and fry the ossobuco until golden brown on both sides
Serve it immediately with lemon slices and sprigs of parsley.
