Clean the meat
Tie the lizard's legs with a string to maintain its rounded shape
In a large frying pan, heat the butter and olive oil
Add the meat and fry until it browns evenly on all sides
Let it cool and put it in the freezer for about 1 hour so that it becomes firm enough to be sliced into thin strips
