Scale and remove the gills from the fish
Blend all other ingredients except lime juice in a blender
In a bowl, place the fish and drizzle with lime juice
Add the blended seasoning mixture and let it rest for about 1 hour
Arrange the fish on banana leaves and bake in a preheated oven or grill at 200°C for 30-35 minutes
Serve with very tender mashed potatoes.
