Season the cod fillets and shrimp with lime juice, salt, pepper, and garlic. Reserve
In a large skillet, heat the olive oil and layer the fish, shrimp, onion, garlic, tomatoes, and peppers
Let it cook over low heat without stirring until all ingredients are tender
Add the coconut milk, parsley, cilantro, and let it simmer for an additional 7 minutes
Serve with rice and beans.
