Add the all-purpose flour and stir until lightly toasted
Add the white wine and whole milk, stirring constantly, until a smooth cream forms
Remove from heat, add the smoked trout fillets, mix well, and set aside
In a separate skillet, melt the remaining butter and cornstarch over high heat, stirring until golden brown
Place the reserved cream in ramekins (optional), sprinkle with toasted flour, and serve immediately
