1 kg of cooked and peeled shrimp, 1/2 cup all-purpose flour, 1/4 cup white wine vinegar, 2 1/2 cups milk, 1/2 cup heavy cream, 2-3 tablespoons ketchup, salt and pepper to taste, 1 beautiful sweet potato
1 kg of cooked and peeled shrimp, 1/2 cup all-purpose flour, 1/4 cup white wine vinegar, 2 1/2 cups milk, 1/2 cup heavy cream, 2-3 tablespoons ketchup, salt and pepper to taste, 1 beautiful sweet potato
Cut a slice off the top of the sweet potato
Remove the pulp from the sweet potato with a knife, being careful not to puncture the skin
Melt butter, whisk in flour, cook until mixture browns, then gradually add white wine vinegar, milk, and heavy cream, stirring constantly
Cook and stir until mixture thickens slightly
Season with ketchup and English mustard if desired
Fill sweet potato with mixture, top with warm shrimp, and garnish with additional shrimp
