To make the mousse: Soak the gelatin in water
Heat it until dissolved
Add to a blender with the peaches, lemon juice, and sugar
Blend well
Pour into a 18cm diameter mold that has been moistened with water
Refrigerate until firm
To make the sauce: Blend the peaches
Add the grated lemon peel
Refrigerate at serving time
Serve with the mousse
Portion 8 portions.
