In a mixing bowl, combine the egg yolks, sugar, and butter
Beat for 5 minutes or until a light-colored cream forms
In a heatproof bowl, place the crushed chocolate in the microwave for 30 seconds or until melted
In a separate bowl, sprinkle gelatin over water, let it sit for 2 minutes, and then heat while whisking until dissolved
Add to the egg yolks
Combine the melted chocolate and whipped cream, mix well, and reserve
Beat the egg whites in a snow-like consistency until firm peaks form
In a large bowl, gently combine the egg whites with the creme to form a homogeneous mixture
Distribute the mousse among six glasses and refrigerate for 2 hours or until firm
Decorate with chocolate shavings and serve.
