Mousse
1 cup of natural yogurt
5 sweet passionfruits
1/2 cup of water
2 envelopes of unflavored gelatin
1 pinch of salt
3/4 cup of orange-lime juice

3/4 cup of orange-lime juice
1/2 cup of passionfruit seeds without pulp

Line a strainer with four layers of paper towels
Place the yogurt on top and let it drain for four hours over a bowl
Pass the passionfruit pulp through the strainer to obtain the equivalent of 1 cup of juice. Reserve
Strain the water in the same way
Transfer it to a saucepan and add the gelatin
Bring to a boil, stirring constantly until the gelatin dissolves
Add the reserved juice, salt, and orange-lime juice
Add the yogurt and mix well
Syrup: Cook the passionfruit juice with the seeds in a small saucepan over low heat for 30 minutes or until reduced to 1/2 cup
Let it cool
Pour the mousse into a mold, cover with the syrup, and refrigerate for six hours or until firm
Serve chilled.
