2 1/4 cups cubed watermelon, seeds removed

Blend the watermelon in a blender
Add the butter and pineapple, then mix well
Dissolve the gelatin in cold water and heat until dissolved
Mix with the watermelon mixture
Chill in the refrigerator to thicken slightly
Beat the yogurt with a hand mixer, then add it to the chilled mixture
Mix well and distribute among serving dishes
Chill again until firm
Before serving, garnish with watermelon ice cubes and pineapple rind strips.
