1/2 spoon of flavorless gelatin
1/4 cup of cold water
1 1/2 teaspoons of salt
1 1/2 teaspoons of mustard
1 dash of pepper
2 lightly beaten eggs
3/4 cup of milk
1 1/2 tablespoons of melted butter
4 spoons of lemon juice
1 cup of cooked and flaked fish
lettuce
1/2 spoon of flavorless gelatin

Soak the gelatin in cold water for 5 minutes
Mix the seasonings, eggs, and milk
Place it in a double boiler and cook for 6 to 8 minutes or until thickened
Add the butter, lemon juice, and gelatin, stirring until the gelatin dissolves
Combine the fish, pour into a mold, and refrigerate until firm
Unmold over lettuce leaves
Cut into 4 portions
Serve with mayonnaise, if desired.
