3/4 cup of orange juice

5 thin slices of orange
3 egg whites
Golden Sauce:
3 eggs
1 cup of skim milk
Sorbitol or sweetener to taste
1 1/2 tablespoons of vanilla
1 tablespoon of flavorless gelatin

Golden Sauce:
3 eggs

To make the orange snow: In a large bowl, combine the gelatin and sorbitol or sweetener
Add boiling water and stir until the gelatin is completely dissolved
Add the orange juice and grated peel
Soak the thin slices of orange in the mixture and arrange them around the edges and bottom of a round mold. Reserve
Refrigerate the remaining gelatin mixture at 40°F (4°C) or below, stirring occasionally, until it reaches the consistency of whipped cream
Beat the gelatin and egg whites in an electric mixer at high speed for about 7 minutes, or until the mixture begins to form peaks
Pour the mixture into the prepared mold and refrigerate at 40°F (4°C) or below, allowing it to set for at least 5 hours
Unmold and serve with the Golden Sauce, which is made by beating eggs in a blender, then adding hot milk while still blending
Heat over low heat, stirring constantly, until thickened (about 15 minutes)
Add vanilla and pour into a container
Refrigerate until chilled
Serve over slices of orange snow
Serves 6 with approximately 60 calories each.
