Place the mangos, grated zest, orange juice, and sugar in a saucepan
Cook over low heat for 15 minutes, or until the mangos are tender and the liquid is almost gone
Strain through a sieve or blend in a blender, then let it cool
Whip the egg whites to snowy peaks and fold them into the mango purée
Place the mixture in a bowl and refrigerate until serving
Top with whipped cream
Serve 6 portions.
