Lavishly wash the passion fruits
Cut them, remove the seeds and strain them through a sieve to obtain the juice
Set aside
Place the shells in a pot with water and bring to a boil for 45 minutes
Remove from heat and, using a spoon, remove the white part of the shell and set it aside, discarding the rest
Add some of the juice and blend in a blender
Mix the resulting mass with sugar
Add the remaining juice and bring to a simmer, stirring constantly so it doesn't stick to the pot
When it's thick and comes off the bottom of the pot, remove from heat
Wait for it to cool, transfer to a serving dish and serve in spoonfuls.
