1 Basic Biscuit Recipe
1 tablespoon of unsalted gelatin
2 tablespoons of sugar
1 3/4 cups of milk
4 lightly beaten egg whites
3 tablespoons of sherry
4 large egg yolks
1/4 cup of granulated sugar, or to taste
1/2 cup of maraschino cherries, pitted and chopped

Prepare the batter and let it sit at room temperature
Make the filling
Mix the gelatin, 2 tablespoons of sugar, in a saucepan
Add the milk and egg whites
Stir well
Cook over low heat, stirring constantly, until the gelatin dissolves and the mixture thickens slightly
Add the sherry
Chill in the refrigerator or on top of a bowl with ice and water, stirring occasionally, until it thickens further
Beat the egg yolks until stiff peaks form
Gradually add 1/4 cup of granulated sugar while beating well
Combine the gelatin mixture with the cherries
Pour into the prepared batter
Chill in the refrigerator until firm
Optional: garnish with cherries and chopped hazelnuts
Serves 8 people.
