Place the water and butter or margarine in a saucepan
Bring to a boil, then reduce heat
When the butter has melted, add the flour all at once and mix vigorously with a wooden spoon until a soft ball forms
Remove from heat and add the eggs one at a time, beating well after each addition
Add the mustard, salt, black pepper, and half cup of grated Parmesan cheese
Fill a large saucepan with water and salt, bring to a boil
With a slotted spoon, shape the dough into small balls and place them in the boiling water
Simmer for 15 minutes
Remove the fricassee from the water with a skimmer, and arrange on a buttered platter
Dress with the remaining melted butter or margarine and sprinkle with the remaining Parmesan cheese
