Sear the chopped vegetables in olive oil
Add lightly chopped crab heads and sauté, letting them caramelize well
Add tomato extract soup and let it simmer for another 15 minutes
Cover with cold water and add bouquet garni
Bring to a boil, then remove excess fat and foam that forms on top
Maintain a constant boil for 35 minutes
Strain, pressing well with a conch shell to get all the juice
Reduce by 1/4 and strain again in a fine-mesh sieve

We need, to start, a crab broth
A good crab broth, made with fresh high-quality crab head
In a special iron skillet for paella, pull out the olive oil 1 red onion chopped in cubes, 2 cloves of garlic minced, 2 green peppers chopped in cubes and, for those who love pepper, add a pinch of moça pepper
Sear until caramelized
Add eight large prawns cut into cubes (if you have lobster or caviar, this is the moment to pour it), season with salt and black pepper, and sauté for a bit more
Now add 16 fresh mussels with shells, 400 g of squid cut into slices, small powder cooked and cut into cubes, and sauté for a bit more
It's time to add 800 g of rice and sauté for a bit more
Important: stir well in high heat
Add 300 ml of coconut milk and, gradually, 2 liters of hot crab broth
Stir for the first 12 minutes and let it cook for another 8 minutes without stirring
