For the filling
100g of crispy bacon

1 medium-sized onion, finely chopped
2 cloves of garlic, minced
300g of moody beef
4 tomatoes, seeded and chopped, roasted in 1/4 cup of olive oil

2 tablespoons of vinegar
2 tablespoons of cornstarch
2 bananas-leaf cut into slices and fried in 1/4 cup of olive oil

Prepare the pancakes according to the basic recipe
Make the filling: fry the bacon with olive oil, add the onion and garlic, and let it caramelize
Add the beef and tomatoes, and cook for 15 minutes, stirring occasionally
Season
Add the water, vinegar, and cornstarch, and cook until thickened
Add the bananas, mix well, and fill the pancakes with 2 tablespoons of filling each
