3 cups of cooked rice

1 tablespoon of olive oil
1 chopped onion
1 minced garlic clove
1 tablespoon of grated cheese
4 tablespoons of shredded mozzarella
1 beaten egg
Chopped fresh parsley, salt, and black pepper to taste
2 tablespoons of cornstarch

Heat the butter and olive oil over low heat
Next, sauté the onion and garlic until golden brown
Remove from heat, mix in cooked rice, grated cheese, shredded mozzarella, chopped parsley, salt, black pepper, and beaten egg
Pour the mixture into a greased baking dish
Sprinkle cornstarch on top and bake in a preheated oven at 2000°F for 20 minutes or until the rice is golden brown
Serve immediately.
