500g of Mortadela, cut into small cubes

Heat the olive oil in a pan
Sauté the onion and carrots, add salt, pepper, and chicken broth
Cover and simmer over low heat for about 20 minutes, adding a little water as needed
Clean and wash the spinach, then add it after 10 minutes
Add the Mortadela and cook everything for another 10 minutes, season to taste
Serve in 4 portions
