Prepare the white sauce: In a pan, melt the butter, then add the flour while stirring with a wooden spoon until golden brown
Remove from heat and gradually add the milk while stirring
Return the pan to the heat, stirring until thickened. Reserve
Remove the outer white part of the camembert cheese
Mash the cheese mixing it with the white sauce until forming a paste
Season
Spread this mixture on each crepe
Fold in half and fold again, forming a triangle
Arrange the crepes in a baking dish, sprinkle with grated gruyère and top with melted butter
Bake in a preheated oven (400°F), until lightly golden brown
