Preheat the oven to hot (200°C)
In a large bowl, combine bitter and sweet cassava
Set aside
In a pan, bring the water to a boil
Add salt, vegetable fat, and mix until melted
Pour over the cassava mixture and mix until a dough forms
Gradually add eggs, milk, and knead with hands
Add grated curd cheese and knead until well incorporated into the dough
Shape into balls with 1 tablespoon of dough each and place in an ungreased baking dish, leaving space between them
Bake in the hot oven for 30 minutes, or until the cheese bread doubles in volume and its base starts to brown
Serve warm.
