2 packets of active dry yeast for bread

1/2 cup of warm water
4 tablespoons of butter or margarine, cut into small pieces
2 cups of lukewarm milk
5-6 cups of all-purpose flour
6 1/2 cups of whole wheat flour (750-870g)
2 teaspoons of salt
6 tablespoons of melted butter
2 egg yolks
2 tablespoons of water
2 tablespoons of sesame seeds

Dissolve the yeast with sugar in warm water
Let it rest for 10 minutes
Melt the butter in lukewarm milk and mix with yeast in a large bowl
Gradually add 2-3 cups of all-purpose flour, mixing well after each addition, until a dough forms
Knead vigorously with a wooden spoon
Cover and let the dough rise for 1 hour
Punch down the dough and add more all-purpose flour, one cup at a time, until it can be kneaded easily
Shape into small balls and place on a floured surface
Knead well
Place in a greased bowl
Flip to grease the top as well
Cover and let rise for another hour
Punch down the dough and shape into desired size
Let rest for a few minutes
Roll out to 1/2 cm thickness
Cut into triangles, brush with melted butter, and roll up
Place seam-side down in a greased baking dish
Fold the ends towards the center, brush with egg yolk, and sprinkle with sesame seeds
Bake in a preheated moderate oven (180°C) for 1 hour or until golden brown
Yield: 47 bite-sized breads.
