In a bowl, combine the sugar, yeast, and warm water
Let it rest for 10 minutes until foamy
Aketo the mixture in a bowl and add the egg, butter, sugar, salt, and hot milk
Let it rest for 5 minutes while mixing to dissolve the sugar and salt well and melt the butter
Add the cold water, yeast, and flour gradually, stirring well
Mold over a floured surface
Place in a bowl and let it rise for 30 minutes
Shape into mini rolls and let them rest for 1 1/2 hours
Bake in a preheated oven (200°C) for 15 minutes
Important: These mini rolls should not be golden brown
For the filling, melt the butter over heat
Add the flour and stir until lightly browned
Add the milk gradually while stirring constantly
Cook until thickened
Add the Parmesan cheese and cook, stirring, until melted and a smooth cream forms
Let the mini rolls cool down
Cut and fill with the cream
Yield 68 mini rolls.
