    Remove the guts as indicated by the dotted line.

    1- Remove the spine to serve an entire fish. Take out the head and tail and make a cut along the length.

    2-Slide your knife along the spine, while moving away from the meat and opening up the fish. Do the same on the other side.

    3-Carefully pass your knife under the spine, lifting it. Remove with the help of a fork, as shown.

  • 5

    4- Put the two parts back in place to close the fish. If you want, put the head and tail back.
