Mash the garlic with 1/2 teaspoon of salt
A little at a time, add the tahini and mix well with a wooden spoon
Add a bit of cold water alternately with lemon juice
The water thickens the mixture, while the lemon juice keeps it light
Continue adding in small increments until you reach the desired consistency
Add the parsley and mix
Check the seasoning
Serve with pita bread, or as an accompaniment to fried fish
