2 hard-boiled eggs
1 package of American cream cheese (227g)
1 tablespoon of chopped parsley
1 tablespoon of cognac
Salt and black pepper to taste

Melt the butter in a frying pan
Add the chicken and cook over medium heat for 10 minutes, stirring occasionally, until it's tender
Drain
Mix the chicken with the eggs and blend in an electric mixer or processor, in small batches each time, or process
Place in a bowl and reserve
Mash the cheese and mix with a wooden spoon until smooth
Add the chicken to the cheese and add remaining ingredients
Serve hot with toast or biscuits
