1 turkey breast
2 kg of coarse salt
1 cup of fresh thyme
1 turkey breast

Trim excess fat from the turkey breast
Wash it well in cold water and dry with paper towels
Lay a thick layer of coarse salt at the bottom of a baking dish
Place the turkey breast in the center
Wrap it with thyme, ensuring no part is exposed
Cover the rest of the turkey with the coarse salt
Make sure there are no gaps
Bake in a medium preheated oven for approximately 40 minutes, or until the salt crust becomes hard
Remove from the oven and use a meat mallet to break the surface of the salt at serving time
Remove excess salt and serve immediately.
