1 medium tomato, peeled and seeded, cut into cubes

Season the fish with salt and black pepper, inside and out
In a bowl, mix together oatmeal, onion, garlic, and tomato
Season to taste
Place the fish in a refractory dish
Fill the fish with the oatmeal mixture
Close with toothpicks
Drain excess water from the dish
Put it in the oven at moderate heat (180°C) for about 30 minutes or until the fish is cooked
If it dries out, add more water
