Mix all the ingredients together and cook in a covered pan over low heat until the vegetables are tender but not mushy, and the liquid has been fully absorbed
Place the stuffing lightly on the fish without pressing down
Close the fish with toothpicks or skewers
Roast in a moderate oven, basting occasionally with dry white wine
Use about 1 1/4 cups of stuffing
