1 fish of about 1 1/2 kg (pescada, perna-de-moja, namorado, badejo, robalo etc.)

2 cups of lightly toasted breadcrumbs
1/3 cup finely chopped onion
6 tablespoons plain yogurt
4 tablespoons chopped pickles

Remove the spine, scale the sides at a fish market
Wash and dry the fish well
Season inside and out with salt and black pepper
Place the fish in a shallow non-stick baking dish
Mix together the breadcrumbs, onion, yogurt, pickles, salt and black pepper
Stuff the fish without overfilling
Brush the fish with olive oil
Cover with aluminum foil
Bake at moderate heat (180°C) for 45 minutes or until the fish is cooked through
Let it rest for 8 minutes.
