Bring 5 liters of water with 1 tablespoon of salt to a boil
Cook the penne pasta until al dente

Heat the olive oil in a pan and sauté the onion
Add the tomatoes and cook for 5 minutes
Then, add the pine nuts, ricotta cheese, salt, black pepper, and oregano
Stir carefully
Drain the penne pasta and combine it with the sauce
Add the parsley and basil
Finally, sprinkle with Parmesan cheese and serve
