1/3 cup white wine
1/4 cup passionfruit juice
2 tablespoons water
2 tablespoons honey
2 tablespoons lime juice
11/2 teaspoons cornstarch
1/2 teaspoon grated ginger
4 grams black peppercorns
4 ripe pears, firm and with stems
1 sprig of rosemary
1/3 cup white wine
1/4 cup passionfruit juice
2 tablespoons water
2 tablespoons honey
2 tablespoons lime juice
11/2 teaspoons cornstarch
1/2 teaspoon grated ginger
4 grams black peppercorns
4 ripe pears, firm and with stems
1 sprig of rosemary
Peel the pears without removing the stems
Brush them with lime juice to prevent browning
In a bowl, combine honey, ginger, rosemary, peppercorns, wine, and passionfruit juice
Mix well
Add the pears and microwave at high power for six minutes, pouring in the sauce halfway through or until the pears are tender
Remove the pears and reserve them in another container
Dissolve cornstarch in water and add it to the passionfruit juice
Mix well and microwave for two more minutes at high power or until slightly thickened
Arrange the pears on individual plates and spoon over the sauce
If desired, garnish with rosemary sprigs and black peppercorns
Serve warm or at room temperature.
