1 pork ribs of about 6 kg
3 tablespoons (2 inches) of salt
black pepper to taste
1 tablespoon of grated ginger
1/2 tablespoon of ground cloves
5 garlic cloves, minced
10 bay leaves
1 1/2 cups of rum
5 cups of water
2/3 cup of lemon juice
1/2 cup of brown sugar, well packed in the cup
2 tablespoons of all-purpose flour
1 pork ribs of about 6 kg

Make incisions on the pork ribs to form squares
Mix together the salt, black pepper, ginger, cloves, and garlic
Rub the mixture onto the surface and cuts of the pork ribs
Place the pork ribs in a baking dish and top with bay leaves
Add 3/4 cup of rum and 1 cup of water
Preheat the oven to moderate temperature (170°C)
After 2 hours, mix together 3/4 cup of rum, lemon juice, and brown sugar
Reserve 1/3 of this mixture and baste the pork ribs with the remaining mixture in 2 stages
If necessary, add more water
When the pork ribs are cooked, remove from the oven and keep warm
Remove as much fat as possible from the baking dish
Scrape the bottom and pour into a saucepan
Add flour and stir well
Heat over low heat until thickened slightly
Serve with pork ribs
