9 fresh asparagus spears
6 medium cod fillets
Salt and black pepper to taste
1/2 cup dry white wine
Pesto
200g cottage cheese
1/2 cup olive oil
1/2 cup vegetable broth
1 cup fresh parsley leaves
1/2 cup chopped scallions
1/2 cup chopped walnuts
2 tablespoons grated Parmesan cheese

Preheat the oven to medium temperature
Cook the asparagus
Place the fish and cooked asparagus on a foil sheet or parchment paper, season with salt and pepper
Brush with white wine and close like a package
Place the packages in a baking dish and bake for 10 minutes or until the fish is tender
Pesto
Combine all ingredients in a blender and blend until smooth
Once the fish comes out of the oven, tear off the center paper
Spread 3-4 tablespoons of pesto on top and serve with mixed greens or rice.
