4 fish fillets of about 250g each, cleaned and skinned from the sides
4 tablespoons of butter or margarine
1/2 cup of finely chopped onion
3/4 cup of grated carrot in a coarse grater
1 cup of diced palm heart
2/3 cup of breadcrumbs
2 tablespoons of chopped fresh parsley
Salt and black pepper to taste
2 tablespoons of butter or margarine
2 tablespoons of lemon juice

In a bowl, mix together butter or margarine, onion, and carrot
Heat it in the microwave at high power for about 2 minutes, or until the vegetables are tender
Do not cover and stir once
Add palm heart, breadcrumbs, parsley, salt, and black pepper, and mix well
Place the fish fillets in a rectangular refractory dish
Stuff each with the above mixture
Melt 2 tablespoons of butter in the microwave
Add lemon juice
Baste the fish fillets with this mixture
Cover with a leaf of impermeable paper or aluminum foil and heat it in the microwave at high power for about 5 to 8 minutes, or until the fish is cooked
As an alternative to fish fillets, you can use 8 anchovies, 8 sardines, or other small fish.
